As The Fall Leaves Fall

Hello Readers, It sure has been a while since I have posted on this blog.  Priorities, Time, and  Life Changes due happen. This happens to all at one point in are lives. As the leaves fall here in Pennsylvania, I think of apples, pumpkins, and beautiful colors. The oranges, yellows, and reds.  It makes me want to take a ride through the hills and gaze at the change of the season.   It is time for fall baking, apple crisp, apple pie, apple butter, apple sauce, apple cake, pumpkin bread, pumpkin pie, and pumpkin spice latte. Just to name a few of the fall delicious treats, I could go on and on. Time for porch decorating, the mums are so colorful and full of life. Add a few, some corn stalks, and don't forget the pumpkins. Add a little ghoulish charm to the porch, Halloween is just around the corner. This is my favorite time of the year. Happy Easter

As My Day Went-

Good day to all my readers, My day started out with being woke by Sadie (the 5 month old lab) at the break of dawn. She is a loving energetic new member to the family.  One of her favorite things to do is walk out with me to the chicken coop. Since she arrived we have had to add a different enclosure for the chickens, she thinks they are fun to chase. As we head  to the chicken coop, Sadie is rearing to go, ball in her mouth. We let the chickens out and she runs around like crazy, bark! bark! We head back to the house, and finally my first cup of coffee. As I sip my coffee and enjoy the aroma of  "Dark Chocolate Truffle " (pick of the day), I brain storm of what is on the agenda for the day.  Out comes the Beagles, sleepy as can be, one right after the other. Angel Food Cake

Homemade Angel Food Cake- It is the best Angel Food Cake you will ever have. It takes a tremendous amount of eggs. Good way to use up your farm fresh eggs. Make this #5 on the what to do with Eggs.   Serves: about 12 Ingredients 1 cup cake flour (no other flour substitutions) ⅔ cups sugar 12 large egg whites only, must be at room temp (If any yolk accidentally falls in, remove it! It's very important not to have even a little yolk mixed in.) 1½ tsp cream of tartar ¼ tsp table salt ⅔ cups sugar 1½ tsp vanilla extract ½ tsp almond extract (must have)   Directions Important: Do NOT grease the 2-piece angel food cake pan. Preheat oven to 375F. Sift cake flour and ⅔ cup sugar into a bowl and set aside. In a separate bowl, beat egg whites, cream of tartar, and salt until it forms soft peaks. Add the other ⅔ cup sugar slowly, and then beat on high until stiff peaks form. Beating on LOW, add in flour mixture and both extracts slowly, stopping as soon as ...

English Muffin & Egg

#2 of What to do with Eggs You will need: English Muffin (original or wheat) Egg Cheese slice (your choice) Meat (bacon, Canadian bacon, sausage patty) In a small skillet cook your meat choice, set aside.  Add egg to pan and fry , and let the yolk cook a little or you will have a messy muffin. While you are cooking the egg, toast your muffin and have your cheese slice ready. How to assemble,  take one have of muffin, add meat, egg, cheese and top with other muffin half. Enjoy, they are yummy. These were a weekly staple when the kids were growing up. I would prepare them and wrap in foil. The kids would arrive at the kitchen table when they were ready for school. They unwrap and the cheese is melted. Just scrumptious!  It would warm their bellies and off they went. Remember- Breakfast is the most important meal of the day.  

Scramble Scramble Scramble!

# 1 Scramble Eggs Scrambling yours eggs, I would say is the easiest way.  There is so many variations that you can do. My favorite is:  Add a dab of olive oil to a small skillet.  Add some garlic, sauté.   Add eggs and scramble. Then add a handful of mixed greens, stir until greens start to wilt. Add some feta cheese and dish on plate. I serve it with a piece of toast, spread with peanut butter and a glass of coconut milk. Be creative, you can mix just about anything to your scramble eggs.  Kim

Sharing thoughts.

Hello Readers, Happy February!  Sorry that I have been away, my blogging was at a halt, but I am proud to announce that I am back.  Ready to Share with all my Friends, Family, and Readers Since my last posts, there has been a move. We are now residing in Sundance, Wyoming. We have made a change and slowly adjusting. We now have chickens, 3 dogs, and 1 cat. The nest is empty, our children are now grown and on their own. I am ready to start sharing my crafts, scrapbooking, trash to treasures, quilting (new hobby), and small homestead/farm. Back to blogging, Kim
