English Muffin & Egg

#2 of What to do with Eggs You will need: English Muffin (original or wheat) Egg Cheese slice (your choice) Meat (bacon, Canadian bacon, sausage patty) In a small skillet cook your meat choice, set aside.  Add egg to pan and fry , and let the yolk cook a little or you will have a messy muffin. While you are cooking the egg, toast your muffin and have your cheese slice ready. How to assemble,  take one have of muffin, add meat, egg, cheese and top with other muffin half. Enjoy, they are yummy. These were a weekly staple when the kids were growing up. I would prepare them and wrap in foil. The kids would arrive at the kitchen table when they were ready for school. They unwrap and the cheese is melted. Just scrumptious!  It would warm their bellies and off they went. Remember- Breakfast is the most important meal of the day.  

Scramble Scramble Scramble!

# 1 Scramble Eggs Scrambling yours eggs, I would say is the easiest way.  There is so many variations that you can do. My favorite is:  Add a dab of olive oil to a small skillet.  Add some garlic, sauté.   Add eggs and scramble. Then add a handful of mixed greens, stir until greens start to wilt. Add some feta cheese and dish on plate. I serve it with a piece of toast, spread with peanut butter and a glass of coconut milk. Be creative, you can mix just about anything to your scramble eggs.  Kim
