Peanutbutter Cookies YUM!!!!

Today is Tuesday and it seems like a Monday. You ever have those days? It's like this, the kids need something for school that they should of asked for a week ago, but no they need it now. This started my day, and then the washer is acting up. We will need to call a repair guy, I am sure of it.  The car needs new brake pads, we discovered this a few day ago. You know that saying, "When it rains, it poors" I am certainly feeling that.

On another note, I made some peanutbutter cookies today. These cookies are easy and my family loves them. So I thought I would share with you.

Easy Peanutbutter Cookies
  • 1 cup of shortning
  • 1cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • Preheat oven to 350*
Mix (using counter mixer or hand held mixer) together shortning and sugars until creamy and fluffy. Add eggs, mix, then add vanilla. Mix well, about 2 minutes. Add peanutbutter and mix for 2 more minutes. Blend flour, baking soda, and salt together in small bowl, add to mixture until blended. (Add a little at a time on low speed or you will have a flour cloud. :)
Scoop onto a cookie sheet. (I use a 2 inch cookie scoop to form the cookies. ) Bake for 8 to 10 minutes. I cook mine for 8 minutes and then let cool on cookie sheet for about 5 minutes or just until they are warm to touch. This makes them chewy and yummy.  Move to a cooling rack and sprinkle with powder sugar.

It's time to decorate as we fall into the autumn scents that fill the air, the taste of a pumpkin latte or apple cider as you enjoy the family on the porch on a cooler evening. As the leaves turn colors and start to fall, the little footsteps you will hear from the little goblins and witches by the end of October.
